Ingredients

  • 2 cups 480 ml heavy cream
  • 1/4 cup 60 ml water
  • 1 tbsp 10g gelatin powder
  • 1/2 tsp vanilla extract optional, omit for strict carnivore
  • Pinch of sea salt

Optional topping:

  • Whipped cream or bacon crumbles

Instructions

Bloom the Gelatin:

  • In a small bowl, combine the water and gelatin powder. Let it sit for 5 minutes until the gelatin fully absorbs the water and becomes spongy.

Heat the Cream:

  • In a saucepan, heat the heavy cream over medium heat until it begins to steam, but do not let it boil. Stir occasionally.

Dissolve the Gelatin:

  • Add the bloomed gelatin to the warm cream and whisk until completely dissolved. If using vanilla extract, stir it in at this stage.

Season and Pour:

  • Add a pinch of sea salt and mix well. Pour the mixture evenly into ramekins or serving glasses.

Set in the Fridge:

  • Cover the ramekins with plastic wrap and refrigerate for at least 4 hours or until the panna cotta is firm and jiggly.

Serve and Enjoy:

  • Remove from the fridge, garnish with optional toppings if desired, and serve chilled.

Notes

  • Substitutions: For a dairy-free version, use carnivore-friendly coconut cream (if allowed).
  • Storage: Store in the fridge for up to 3 days. Cover tightly to prevent the absorption of odors.
  • Tips: To easily remove panna cotta from ramekins, dip the bottom of the ramekin in warm water for a few seconds before inverting onto a plate.
