- 2 cups 300g cooked chicken breast, shredded or cubed
- 4 cups 350g fresh broccoli florets, lightly steamed
- 1 cup 240ml chicken broth
- 1/2 cup 120ml dry sherry (or substitute with chicken broth + 1 tbsp vinegar)
- 1 cup 240ml sour cream (or substitute with crème fraîche)
- 1 cup 240ml heavy cream
- 1 cup 100g parmesan cheese, grated
- 1/2 cup 60g cheddar cheese, shredded
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
For the Topping
- 1/2 cup 60g breadcrumbs (panko preferred)
- 2 tbsp 30g butter, melted
- 1/4 cup 25g parmesan cheese, grated
Preheat the Oven:Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with butter or cooking spray.
Prepare the Broccoli:Steam the broccoli for 3–4 minutes until slightly tender but still vibrant in color. Drain and pat dry.
Make the Sauce:In a medium saucepan, combine chicken broth, sherry, sour cream, and heavy cream. Heat over medium heat, stirring continuously.Add parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until the sauce is smooth and creamy. Assemble the Casserole:Spread the steamed broccoli evenly in the casserole dish.Layer the cooked chicken on top.Pour the prepared sauce over the chicken and broccoli, ensuring even coverage. Add the Topping:In a small bowl, mix breadcrumbs, melted butter, and parmesan cheese. Sprinkle the topping evenly over the casserole.
