Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach

Instructions
 

  • Prepare the chicken: Season both sides of the chicken breasts with paprika, oregano, salt, and pepper.
  • Heat the skillet: In a large skillet, heat olive oil over medium heat. Add the chicken and cook for 5-6 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken and set aside.
  • Sauté the garlic: In the same skillet, lower the heat and add minced garlic. Sauté for about 1 minute until fragrant.
  • Add the lemon: Pour in the lemon juice and scrape the bottom of the skillet to deglaze. Add lemon zest for extra flavor.
  • Combine and simmer: Return the chicken to the skillet, along with the cherry tomatoes. Simmer for 5 minutes, letting the flavors combine.
  • Add the spinach: Toss in the baby spinach and cook until wilted, about 1-2 minutes.
  • Serve: Garnish with fresh parsley or extra lemon slices if desired. Serve hot with rice, quinoa, or a side salad.

Notes

  • For added flavor, marinate the chicken in the spices and lemon juice for 15 minutes before cooking.
