  • 2 tbsp olive oil 30ml – or any neutral oil
  • 1 tbsp white vinegar 15ml – adds brightness; apple cider vinegar works too
  • 2 tsp chili powder 4g – adjust to your spice level
  • 1 tsp smoked paprika 2g – for that smoky depth
  • 1 tsp ground cumin 2g – earthy base flavor
  • ½ tsp garlic powder 1g – or 1 small clove, minced
  • ½ tsp onion powder 1g
  • ½ tsp sugar 2g – balances the acidity
  • ¼ tsp salt 1.5g – add more to taste
  • 1 –2 tbsp water 15–30ml – for thinning, as needed

Instructions
 

  • Combine Ingredients:In a small bowl or blender, combine the tomato paste, olive oil, vinegar, chili powder, paprika, cumin, garlic powder, onion powder, sugar, and salt.
  • Blend or Mix:
    Blender Method: Blend until smooth and creamy.
    By Hand: Mix thoroughly with a fork or whisk until the paste is evenly combined.
  • Adjust Consistency:Add 1 to 2 tablespoons of water to thin the paste to your desired texture. Stir until smooth.
  • Taste and Tweak:Taste and adjust salt, sweetness, or heat. Want it spicier? Add a pinch of cayenne!
  • Optional Rest Time:Let the paste sit in the fridge for 10–15 minutes before using—it allows flavors to develop beautifully.
