Ingredients

  • 200 g capellini pasta
  • 2 tbsp olive oil
  • 2 pcs cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • Salt and pepper, to taste
  • 1/4 tbsp red pepper flakes (optional)
  • Fresh basil, chopped (for garnish)
  • 2 tbsp grated Parmesan cheese (optional)

Instructions

  • Cook the Capellini: Bring a large pot of salted water to a boil. Add the capellini pasta and cook according to the package instructions (usually 2-3 minutes). Drain and set aside, reserving a little pasta water.
  • Prepare the Garlic and Olive Oil: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute, stirring constantly, until fragrant but not browned.
  • Sauté the Cherry Tomatoes: Add the halved cherry tomatoes to the skillet and cook for 2-3 minutes, just until they begin to soften. Season with salt, pepper, and optional red pepper flakes.
  • Combine the Pasta and Sauce: Add the cooked capellini to the skillet with the garlic and tomato mixture. Toss everything together, adding a bit of the reserved pasta water to help coat the pasta evenly with the sauce.
  • Garnish and Serve: Once everything is well combined, garnish with freshly chopped basil and a sprinkle of grated Parmesan cheese (if desired). Serve immediately.
